FAQ

Does baking time change with a different pan?

Yes. Shallower batter bakes faster and deeper batter slower. Keep the same temperature, start checking 10 minutes early, and use the toothpick test.

Can I bake an 8-inch round recipe in a 9-inch round?

You can, without changing anything. The cake will be about 20% thinner and bake a few minutes faster. Scale by 1.27× if you want the same height.
